My chicken and pig refused to stay still and be made into this dish. Why am I having this problem?

I'd say use some toothpicks, thinner chicken pieces, or deal with it.

Is it really ok to cook the veggies in the pig/chicken juices. I'm mostly concerned with the chicken is all, though I suppose the juices are mostly cooked clean of any salmonella.

Just want a confirmation is all.

I think your pan is hot enough to kill salmonella if it cooks the meat.
